Ah, Mayfield one of my all time favourites, first tasted it in a cheese shop ( unfortunately gone now) in Whistable in Kent. I asked for a Swiss style cheese & was given Mayfield to taste. I loved it, not easy to source though, but Rennet & Rind supply it.

Such a beautiful artisan cheeses Rich & creamy and very much along the lines of an Emmental style cheese.
Most enjoyable on it's own but I found that the sweetness of a Caramelised Onion Marmalade really enhanced the subtle flavour.
Definitely one that will be appearing in my basket again!

Utterly lovely. Unexpected holes in this nicely textured cheese. Flavour wise, it develops in the mouth. Is nutty, a hint of aged Gouda initially then a full delightful enjoyably satisfying complex taste.
