Celebrating British Dairy Farms

Rennet and Rind is the home for British artisan cheese, where we honour the excellence, dedication, and sustainable practices of the nation’s finest cheesemakers. We want to use our platform to dive into the heart of British cheesemaking and show off the rich heritage and innovative spirit that pulse through the industry.

Across the land, there are passionate farmers who nurture their herds and cultivate their farms with the utmost care to produce the very best cheese they can. The proof is in the countless World Cheese Awards that many varieties have been given. They are the unsung heroes of the British food scene, and through our platform, we bring their craft to your doorstep.

Leicestershire Cheese

Leicestershire Handmade Cheese Co. is a story of reviving former glory. Before the dairy farm came along, Red Leicester varieties had died out in its home county for over 50 years because of a public distaste for its rubbery texture. The farm took in a herd of Holstein Friesian cows and fed on lush pastures, resulting in Sparkenhoe Red Leicester, a vintage concoction that glows with a burnt red and lands on the tastebuds with a rich blend of nutty, buttery and meaty flavours. Not only did Leicestershire Handmade Cheese Co. create a Red Leicester that revitalised the variety, but brought it back home..

Curlew Dairy

A hundred years ago, almost every dairy farm in Wensleydale would have made their own cheese. When Curlew Dairy, makers of Yoredale Wensleydale, was founded in 2022, they became the only farmhouse cheesemakers in Wensleydale. Their key variety brings new ideas to the outmoded Wensleydale texture, mixing an assortment of crumbly, smooth, creamy, and sticky sensations all in one bite. They are keeping the flame alive despite the fall of Wensleydale cheese, and have been rewarded for it - in 2023, Yoredale won the Silver award at the British Cheese Awards.

Cropwell Bishop Creamery

If longevity is any sign of success, then Nottingham-based Cropwell Bishop Creamery is the prime example. Making cheeses in the same family since 1847, today it is still handmade by three generations of the Skailes family in the beautiful Vale of Belvoir. This village institution is responsible for one of the holy grails of the British cheese worlds - Cropwell Bishop Stilton. This take on the iconic blue was crowned Supreme Champion at the 2016 British Cheese Awards, thanks to its rolling flavours of rich cream, butter and that Stilton tang with an interior that looks like cracked porcelain. If that’s not enough, Cropwell Shropshire Blue is also their creation.

Sustainability

Independent farms in the UK face a litany of pressures, yet in the face of it all, they outthink it by employing less intensive but more sustainable practices. Industrial-scale cheese production that stocks the supermarket shelves is given the cold shoulder in favour of age-old farming techniques, such as locally sourced milk, heritage animal breeds, mob-grazing, herbal-leys and grass feeding. This holistic approach produces cheese with thought given to the well-being of the animals, the health of the land, and the overall ecosystem. These farms demonstrate that tradition and innovation can work hand in hand to create a more sustainable future.
