Our Frequently Asked Questions (FAQS)

Customer Service Questions

Delivery details and How long does it take for my cheese to arrive?

We aim to deliver your cheese within 3-5 working days (Saturday and Sunday, we are closed). Your cheese will not be in transit for 3-5, but the time taken is to schedule, so our team can hand-cut, wrap and dispatch your cheese within the same day for next-day delivery. Real quality comes from cutting as fresh as possible from the maturing rooms, and consuming as soon as possible is a next-level experience!

Your second option is our express service, which means you are paying to jump the queue, which takes 1-3 working days for your British artisan cheese to be delivered. 95% of these orders are delivered within 24 hours, and this service's cut-off is 11 AM.

We are currently, on average, dispatching orders within 48 hours. If you wish to forward an order for a birthday and require a particular date, add a note to your order, and we'll make it happen.

Questions about Shelf Life?

Dependent on the style of cheese, the majority of cheese we cut and wrap we place 7-14 days upon cutting. This is to the industry standard and the shelf life guidelines provided by the SCA (Specialist Cheese Makers Association).

We also place an ‘At its best before’ date, this is where your cheese is as fresh as it can be, and we believe there’s a very special window of time between cutting fresh and your enjoyment. The cheese is still excellent after this date and 100% food safe, but we are just informing you of that next-level experience.

The only way to extend this shelf life would be to utilise a vac packing method which we are firmly against. Vac packing cheese starves the cheese of oxygen and kills most of the great microflora that makes artisan cheese taste so great. So, we do not do this at Rennet & Rind.

If you are concerned about use-by dates, give us a call, and we can time your delivery date to make sure you get the maximum possible.

What is the difference between Pasteurised and Unpasteurised Cheese?

Pasteurised cheese is made from milk which has been heated for a certain time to kill off any harmful bacteria that may be present in the milk. Unpasteurised or raw milk cheese has not been heat treated and instead relies on the natural bacteria in the milk and the cheesemaking process to ensure the cheese is safe.

What type of cows are best for cheesemaking?

Traditional milk breeds such as Friesian, Holstein, Jersey, Guernsey, Ayrshire, Shorthorn and Dexter all produce the perfect milk for making excellent cheese.

What is Rennet and why is it used?

Rennet is a natural enzyme that binds the proteins found in milk together. This helps in the formation of cheese.

What is the best way to eat cheese?

The best way to eat cheese is to bring it out of the fridge and leave it for an hour at room temperature (18 to 20 degrees). This allows the cheese to be at its best before you are going to serve it.

How does rennet affect the flavour of the cheese?

The type and amount of rennet used in cheese production can significantly affect the final product's flavour, texture, and consistency. Using too much or too little rennet can result in cheese that is too soft, too hard, or has an unpleasant flavour. Different types of rennet also produce different flavours, and cheese producers often experiment with different types and amounts to achieve the desired result.

Can rennet be substituted with other ingredients in cheese production?

Yes, there are several substitutes for rennet in cheese production, including lemon juice, vinegar, and citric acid. However, these alternatives provide a different level of consistency and quality than rennet, and the resulting cheese may have a different texture and flavour.

Is rennet safe to consume?

Yes, rennet is safe to consume and has been used in cheese production for centuries. However, individuals with allergies or lactose intolerance should be cautious when consuming cheese made with animal rennet.
