THE CHEESE
When you walk into our store, you step into a world of British cheese. Our selection is a tribute to traditional and sustainable farming from independent British farms, and we’ve witnessed many receive prestigious honours at the World Cheese Awards.
AFFINAGE & MATURING CHEESE
Cheesemaking is both an art and a science, and requires skill and patience to develop a flavour profile. Our dedicated maturing room is our centre for affinage, maturing our stock under the watchful eye of our award-winning affineur.
CUTTING & PACKING
All our cheese is preserved in quality wax paper whether you buy online or in-store. Our online deliveries are packaged in refrigerated boxes, making sure you experience the very best of what we offer.

At Rennet and Rind, we find ourselves continually in awe of the dedication of the cheesemakers behind our stock. We venture out to visit the farms regularly to gauge how produce has been, see the process in action and meet the herd that makes the most important ingredient. Every time, we are overwhelmed with the level of passion and admiration on display. We always note how every farm faces common industry issues that arise every year, yet through it all they continue to bring award-winning taste sensations you cannot get anywhere else.
Selecting Our Cheeses
The selection of cheeses in our store is a varied and far-reaching window into British cheese today. We have cheddars from the southernmost points of Cornwall and Devon to blues made in the Hebrides of Scotland. Our only condition is to stock varieties from independent artisan farms, as we want to support the makers who choose to use traditional and sustainable farming practices. The quality of our cheeses is immense, accumulating scores of medals from the World Cheese Awards, including several winners of the prestigious Super Gold title.
Affinage & Maturing
In artisan cheesemaking, the maturing process lets cultures and terroir take over and develop every block of cheese into something completely unique from each other. Intense flavours are created from cheese mites feasting on the cheese, breaking down proteins and fats to release complex flavours and aromas. Cheesemakers mature cheese in controlled environments to create certain flavour, texture and aroma profiles, a practice known as affinage. Our dedicated maturing room stores the cheeses we stock and develops them further in the hands of our two-time Affineur of the Year, Perry Wakeman.

Cutting & Packing
For our customers, the cheese is only as quality as how it is packaged. Online, you can buy blocks of 250g, 500g or 1kg, precisely cut using wire to maintain the integrity of the flavours hidden inside. In our shop, we can cut to whatever weight you like. Plus, all the cheese that leaves our store is wrapped in high-quality wax paper to keep its rich flavours contained and prevent it from drying or ageing. Delivered packages come in refrigerated boxes, including our Mystery Cheese Boxes, so that no matter how far away you live, you’ll still get cheese as fresh as the moment it leaves our shop.
